Blue Butterfly Tea

from $1.50

The tea that changes color. Whole dried butterfly pea flowers brew a stunning deep-blue cup with a light, earthy flavor, a bit like a mild green tea. Add a squeeze of lemon or lime and watch it turn violet right before your eyes.

Naturally caffeine-free and wonderfully versatile, it's lovely hot or iced, as a natural food coloring, and as the star of show-stopping mocktails and cocktails.

Ingredients: Butterfly pea flowers (Clitoria ternatea)

Brew: Steep 4–6 flowers (or 1 tea bag) in 8 oz of boiling water for 3–5 minutes. Add honey and a squeeze of lemon to watch the color change.

Caffeine: None, naturally caffeine-free

Butterfly pea is a natural colorant and may stain light fabrics and countertops.

Recipe: Blue-to-Purple Mule

  1. Steep 10 flowers in 1 cup of boiling water for 5 minutes. Cool, pour into an ice-cube tray and freeze.

  2. Fill a glass with crushed ice and top with the blue tea ice.

  3. Add 2 oz of vodka (or skip it for a mocktail) and 6 oz of ginger beer.

  4. Squeeze in fresh lime and watch it turn purple.
