Cardamom Seeds
Hulled green cardamom seeds (Elettaria cardamomum) with a bright, aromatic character and a sweet, warming flavor with notes of citrus, eucalyptus and pine. Native to the forests of southern India, cardamom has been prized for thousands of years. It perfumed ancient Greece and Rome, and it was chewed in ancient Egypt to freshen the breath.
Cardamom is the soul of masala chai, and it’s equally at home in coffee, baking and savory dishes. Already removed from the pods, these seeds are ready to crush and use. For tea, pair cardamom with black tea, cinnamon, ginger, clove or rose, and add a spoonful of honey.
Ingredients: Green cardamom seeds (Elettaria cardamomum)
Hot brew: Lightly crush ½ teaspoon of seeds per 8 oz of water at 212°F. Cover and steep 5–10 minutes, then strain. Sweeten with honey.
Simple chai: Simmer ½ teaspoon of crushed cardamom seeds with 2 cloves, 1 cinnamon stick and a slice of fresh ginger in 1 cup of water for 10 minutes. Add 1 teaspoon of black tea and steep 3 minutes. Strain, then add milk and honey.
Caffeine: None. Naturally caffeine-free. (The chai recipe contains caffeine from the black tea.)
