Gunpowder, also called pearl tea, is a classic green tea from Zhejiang province, China. Each leaf is rolled into a tiny pellet that resembles gunpowder, which gives the tea its name. In the cup, the pellets unfurl into a full-bodied brew with a hint of smokiness and a smooth finish.
One of the most versatile green teas in the world, gunpowder is the traditional base for Moroccan mint tea, delicious iced or cold brewed, great for blending, and even works in cocktails.
Ingredients: Gunpowder green tea
Hot brew: 1 teaspoon (or 1 tea bag) per 8 oz of water at 175–185°F (not boiling). Steep 2–3 minutes. The leaves can be re-steeped 2–3 times.
Iced / cold brew: 2 tablespoons per 32 oz of cold water. Refrigerate 6–8 hours, then strain.
Caffeine: about 35–40 mg per 8 oz, higher than most green teas
